Encapsulation of Peppermint Oil with Arabic Gum-gelatin by Complex Coacervation Method
Authors
Abstract:
The gelatin/gum Arabic microcapsules encapsulating peppermint oil were prepared by complex coacervation using tannic acid as hardening agent. The effects of various parameters, including concentration of wall material, core material, tannic acid and tween80 were investigated on particle size and encapsulation efficiency. For statistical evaluation of the parameters, Taguchi method has been used. The size of prepared spherical microcapsules was 19-66 micrometers. The results showed that, particle size increased with increasing core and wall concentration and decreased with increasing Tannic acid and Tween80 concentration. The efficiency increased by increasing the core and wall concentration, Tannic acid and Tween80 concentration had no effect on efficiency. Maximum efficiency of 82% was under optimal conditions: 4% wall material, 5% core material, 0.75% tannic acid and 0.02% tween80. The release of microcapsules was investigated in gastric and intestinal fluid. The microcapsules were release most of the core material in simulated gastric fluid (pH 1.2).

Effect of pH on Garlic Oil Encapsulation by Complex Coacervation
Coacervation is known to be true microencapsulation because the core material is completely surrounded by a continuous coating of wall material. Coacervation involves interaction between one or many hydrocolloids, particularly between oppositely charged protein and polysaccharide in the same reaction media [1]. The interaction relies on the charges carried by the biopolymers, pH of the coacerva...
full textComplex coacervation of whey proteins and gum arabic.
Mixtures of gum arabic and whey protein (whey protein isolate, WP) form an electrostatic complex in a specific pH range. Three phase boundaries (pH(c), pHphi(1), pHphi(2)) have been determined using an original titration method, newly applied to complex coacervation. It consists of monitoring the turbidity and light scattering intensity under slow acidification in situ with glucono-delta-lacton...
full textUsing ß-cyclodextrin and Arabic gum as wall materials for encapsulation of Saffron essential oil
Saffron essential oil has a pleasant aroma and medicinal activities. However, it is sensible into the environmental condition. Therefore, it should be protected against unwanted changes during storage or processing. Encapsulation is introduced as a process by which liable materials are protected from unwanted changes. In the present study, different ratios (0:100, 25:75, 50:50, 75:25, and 100:0...

Present study describes microencapsulation of eugenol using gelatin-sodium alginate complex coacervation. The effects of core to coat ratio and drying method on properties of the eugenol microcapsules were investigated. The eugenol microcapsules were evaluated for surface characteristics, micromeritic properties, oil loading and encapsulation efficiency. Eugenol microcapsules possessed good flo...
