An improved version of the “pop-corn” model for baryon production in quark and gluon jets is presented. With a reduced number of parameters the model reproduces well both production rates for different baryon species and baryon momentum distributions. Several recent results of the ALEPH Collaboration covering different aspects of baryon production on the Z resonance are presented. I present a gentle introduction to baryogenesis, the dynamical production of a baryon asymmetry during the early universe. I review the evidence for a cosmic baryon asymmetry and describe some of the elementary ingredients necessary for models of baryon number production.
