چکیده مقاله:
One of the mainly popular consumed colloid protein materials in pharmaceutics, medical, food and military industries is Gelatin. Especially from warm-water fish gelatin report poss similar characteristics to mammalian’s gelatin .Yellow fin tuna (Thunnus albacares) gelatin skin, lots of waste in form of skin and bones of the fish are produced every day. Analysis factors were extracted alkaline gelatin from skin, physiochemical and rheological test (amino acids composition, SDS- page electrophoreses, FTIR (Fourier transform infrared), moisture content, pH, setting point and setting time, melting point and melting time, color and gelatin yield). In contrast cool water fish gelatin, yellowfin tuna had higher gelatin content (Proline and Hydroxyproline) than mammalian gelatin content. SDS-electrophoresis for yellow fin gelatin showed protein bands (α, β, γ) same as mammalian’s protein bands. FTIR (Fourier transform infrared) had the same spectra for both of them. Factors were pH (6.1), Moisture (8.5%) Setting temperature and time respectively 4(c) and 60 (s) and Melting temperature and time respectively were 50 (c) and 45 (s). The color was transparent. In light of these results yellow fin tuna prospect as an alternative to mammalian’s gelatin.

Preparation and Characterization of Chicken Skin Gelatin as an Alternative to Mammalian Gelatin
The aims of this study were to report for the first time, the extraction and physico-chemical properties of chicken skin gelatin compared to bovine gelatin. Extracted chicken skin gelatin 6.67 % (w/v) had a higher bloom value (355 ± 1.48 g) than bovine gelatin (259 ± 0.71 g). The dynamic viscoelastic profile of chicken gelatin exhibited higher viscous and elastic modulus values compared to bovi...
متن کاملEffect of Different Factors on the Quantity of Gelatin and Oil Extracted from Tuna Fish
Gelatin and oil from three species of tuna fish, Thunnus albacares (yellow-fin tuna), Thunnus tonggol (long-tail tuna), and Katsuwonus pelamis (skipjack tuna) were extracted to study the factors affecting yield. Factors studied included organ (fin or skin), catch location (Chah bahar, Bushehr, Bandar-e abbas), season (summer or winter) and species (the three species). To extract gelatin and oil...
متن کاملExtraction and characterization of gelatin from different fresh water fishes as alternative sources of gelatin
Gelatins from the skin of four different species of fresh water fish, namely pangas catfish (Pangasius pangasius), Asian redtail catfish (Hemibagrus nemurus), striped snakehead (Channa Striata), and Nile tilapia (Oreochromis niloticus) have been successfully extracted by citric acid. The gelatin from pangas catfish was found to possessed the highest rheology properties compared to the others. I...
متن کاملEnvironmental preferences of yellow ® n tuna ( Thunnus albacares ) at the northern extent of its range
We used acoustic telemetry to examine the small-scale movement patterns of yellow®n tuna (Thunnus albacares) in the California Bight at the northern extent of their range. Oceanographic pro®les of temperature, oxygen, currents and ̄uorometry were used to determine the relationship between movements and environmental features. Three yellow®n tuna (8 to 16 kg) were tracked for 2 to 3 d. All three...
متن کاملExtraction of gelatin from bigeye snapper (Priacanthus tayenus) skin for gelatin hydrolysate production
Bigeye snapper skin was pretreated with 0.025 N NaOH for 2 h and 0.02 M acetic acid for 2 h. Minced pretreated fish skin extracted at 80, 90, 100oC for 1, 2, 3 h and 110, 120, 130oC for 30 min were compared. The result showed that protein content and hydroxyproline (Hyp) yield of skin gelatin increased with increasing extraction temperature and time (p<0.05). The samples extracted at 120 or 130...
متن کاملQuality assessment of filtered smoked yellowfin tuna (Thunnus albacares) steaks.
UNLABELLED Filtered smoke (FS) has been used to preserve taste, texture, and/or color in tuna and other fish species. This treatment is particularly important in color preservation during frozen storage. The objective of this study was to compare changes in the quality profiles of FS-treated and untreated (UT) yellowfin tuna (Thunnus albacares) steaks stored in 3 ways: room temperature (21 to 2...
