Abstract:

The aim of this work was to study the effect of sodium chloride replacement with potassium chloride on quality changes of hot smoked Kilka during storage at ± 4°C. To achieve this, after initial preparation, samples were exposed to brining process in two salts. This study was designed in two stages: in the first stage, different levels of salt replacement were used to select the best smoked treatment based on sensory test. In this stage, treatments were as:  control (100% of NaCl), treatment 1 (75%NaCl/25%KCl), treatment 2 (50% NaCl/50%KCl), treatment 3 (25%NaCl/75%KCl), treatment 4 (100% of KCl). Samples were processed at slow and fast speed smoking for about 4 h, cooled and then tested by test panel. In the second stage, biochemical changes of selected treatment (treatment 1) were compared with control samples during storage at ± 4°C for 15 days.  There were no differences (p < /em>>0.05) in content of fat, moisture, ash and TBA indices between control and treatment1. Protein levels and salt intake were significantly (p < /em>

The Effect of Free and Encapsulated forms of Quercus persica Extract on the Quality of Minced Kilka (Clupeonella cultriventris caspia)

Quercus persica has a natural antimicrobial and antioxidant properties that are effective on pathogens and retard lipid oxidation. The aim of this study is using two concentrations of free and encapsulated forms (with two covers: maltodextrin + carrageenan and gelatin + carrageenan) of Q. persica extract (0.5% and 1%) in order to improve the shelf life of minced kilka at the refrigeration tempe...

Comparing the effect of encapsulated and unencapsulated fennel extracts on the shelf life of minced common kilka (Clupeonella cultriventris caspia) and Pseudomonas aeruginosa inoculated in the mince

The quality of minced kilka (Clupeonella cultriventris caspia) with gum arabic encapsulated (0.3% and 0.5% w/w) and unencapsulated fennel extract (FE) (0.3% and 0.5% w/w) stored at 4°C was examined over a storage period of 15 days. The control and the treated fish samples were analyzed periodically for microbiological (total viable count [TVC] and total psychrotrophic count [TPC]) and chemical ...

Sodium-potassium-chloride cotransport.

Obligatory, coupled cotransport of Na(+), K(+), and Cl(-) by cell membranes has been reported in nearly every animal cell type. This review examines the current status of our knowledge about this ion transport mechanism. Two isoforms of the Na(+)-K(+)-Cl(-) cotransporter (NKCC) protein (approximately 120-130 kDa, unglycosylated) are currently known. One isoform (NKCC2) has at least three altern...

Chemical composition and fatty acid profile of common Kilka , Clupeonella cultriventris caspia,

The objective of the present study was to determine chemical composition and fatty acid profile of common Kilka ,Clupeonella cultriventris caspia, in the Caspian Sea. The chemical analysis revealed that the protein and lipid content of common Kilka were 15.05 and 6.5% of the fresh weight, and total MUFA, PUFA and SFA were found to be 37.00, 32.89 and 29.03% respectively. Palmitic acid (16:0) a...
