Furan in Food

چکیده
Similar to acrylamide, furan is a process contaminant which evolves within the production and preparation of food during heat treatment (sterilising, roasting, baking) from natural components of the food. So far, reducing sugars, amino acids, ascorbic acid, unsaturated fatty acids and carotenoids were identified as possible precursors transforming into furan under the influence of heat. The following foods are mainly concerned:

Furan in Food – a Review
Vranová J., Ciesarová Z. (2009): Furan in food – a review. Czech J. Food Sci., 27: 1–10. Furan and its derivatives were identified in a small number of heat-treated foods back in the 60’s and 70’s. In May 2004, US Food and Drug Administration published a report on the occurrence of parent furan in a number of thermally treated foods. Since furan has been classified as “possibly carcinogenic to ...

Furan is a 5-membered ring compound with high volatility. The U.S. Food and Drug Administration (FDA) has recently published a report on the occurrence of furan in a large number of thermally processed foods. However, the FDA's analytical method, using standard curve addition, is not suitable for high-throughput routine laboratory operations. We developed a rapid and improved method for determi...
متن کاملDetermination of Furan in Food by Gas Chromatography-Mass Spectrometry and Headspace Sampling
Furan is naturally occurring at low levels in many foods and drinks.1 Furan consumption is of concern because it has been classified by the International Agency for Research on Cancer (IARC) as possibly carcinogenic to humans, based on studies with laboratory animals. The U.S. FDA has recently published a report on the occurrence of furan in a large number of thermally processed foods, especial...
متن کاملFormation of furan and methylfuran from ascorbic acid in model systems and food.
Previous model studies have suggested ascorbic acid as one of the major sources of furan, a possibly hazardous compound found in thermally processed foods (e.g. canned products, jars). The study showed that about 2 mmol mol(-1) furan was obtained when dry-heating ascorbic acid, while much lower amounts were formed upon pressure cooking, i.e. 58 micromol mol(-1) at pH 4 and 3.7 micromol mol(-1) ...
متن کاملInvestigation on Furan Levels in Pressure-Cooked Foods
Furan is a food processing contaminant classified as possibly carcinogenic to humans. As the occurrence of furan has been reported in a variety of foods processed in sealed containers, the objective of this work was to investigate if the contaminant can be found in home-cooked foods prepared in a pressure cooker. For that, several foods including beans, soy beans, whole rice, beef, pork, potato...
متن کاملEffect of ionizing radiation on furan formation in fresh-cut fruits and vegetables.
Furan, a possible carcinogen, is commonly induced by thermal processing in a wide variety of foods. The possible formation of furan from fresh-cut fruits and vegetables due to irradiation was studied. Nineteen fresh-cut fruits and vegetables were irradiated by 5 kGy gamma rays at 4 degrees C. Furan was analyzed from the irradiated samples using a number of preparation methods. The results showe...
