چکیده

The differences on proximate composition, sensorial analysis (for raw and cooked samples) and flesh productivity of the samples of Parapenaus longirostris that were caught in the North Aegean Sea and Marmara Sea were investigated. Moisture, protein, lipid, ash, carbohydrate, energy content of the North Aegean Sea shrimp were found 74.92 ± 0.1, 20.32 ± 0.16, 2.55 ± 0.1, 2.13 ± 0.08, 0.08%, 110.1 kcal/100 g, respectively. On the other hand, the Marmara Sea shrimp was found 76.9 ± 0.02, 19.06 ± 0.03, 2.22 ± 0.08, 1.51 ± 0.04, 0.33, 102.77 kcal/100g, respectively. Protein, lipid, ash and energy values of the Northern Aegean Sea shrimp were higher than the Marmara Sea shrimp. On the other hand, moisture, carbohydrate values of the Northern Aegean Sea shrimp were lower than the Marmara samples. Sensorial analyses were carried on for raw and cooked samples. Among all properties for raw samples, flesh color, shrimp connective tissue, shrimp body parameters were different from each other according to the result of the panel. According to the result of the cooked shrimp samples among all properties, cooked odour, flavor and texture were different from each other as well. Especially, flavor and textural properties of cooked shrimps of the Northern Aegean Sea were higher than the Marmara Sea shrimp. The flesh yield of the Northern Aegean Sea shrimp was found 46.42%, while Marmara Sea shrimp was found 47.74%. Keywords—Proximate value, sensorial evaluation, Parapenaus longirostris flesh yield.

Morphologic and Allozyme Analyses of European anchovy (Engraulis encrasicolus (L. 1758)) in the Black, Marmara and Aegean Seas

The morphologic and genetic variations of Engraulis encrasicolus (L. 1758) were studied based on morphometric, meristic and allozyme analyses. Samples were collected throughout the Black, Marmara and Aegean Seas. Discriminant function analysis of both morphometric and meristic characters indicated the existence of four morphologically differentiated groups of E. encrasicolus. The Aegean Sea and...

Morphological and genetic differentiation of the Black Sea harbour porpoise Phocoena phocoena

The ecological and conservation status of the geographically isolated Black Sea harbour porpoise is currently unknown. Although it has been suggested that Black Sea harbour porpoises are distinct from other populations, the implementation of specific conservation plans has been hindered by the absence of a genetic and morphological study with large sample sizes. We sought to test the hypothesis...

The aim of this study was to assess the ecological factors associated with feeding by Rachycentron canadum (cobia) in the waters of Hormuzgan Province, Iran. Specimens were collected seasonally from Sep. 2014–Sep. 2015 from the Ferdows-1 survey ship and from landing areas in the city of Bandar Abbas. A total of 577 cobia were collected (340 male, 237 female) (20–161 cm Total length). Our result...

The effects of substitution of seaweed, Sargassum ilicifolium, by replacing protein resources, in Litopenaeus vannameii diets was studied. It was carried out by incorporation of raw powdered seaweed at three levels, 0% as control treatment, 5% (C), 10% (B) and 15%(A)  each with four replications in isoprotein, (33%) and isocaloric (355kcal.100-1) diets.. Focal mechanism determinations of earthquakes along the North Anatolian fault, beneath the Sea of Marmara and the Aegean Sea

We determined the centroid moment tensor (CMT) solutions of earthquakes that occurred along the North Anatolian fault (NAF) beneath the Sea of Marmara and the Aegean Sea, using data obtained from Turkey’s broadband seismograph network. The CMT solution of the 2014 Aegean Sea earthquake (Mw 6.9) represents a strike-slip fault, consistent with the geometry of the NAF, and the source-time function...
