چکیده
OBJECTIVES To evaluate the antioxidant potential of porridges (kola kenda) made incorporating herbs. DESIGN Experimental study. Main outcome measures Total phenolic content was estimated by Folin Ciocalteau method (GAEmg/g(FW) and the antioxidant potential by ABTS free radical scavenging activity (TEAC(μg)/100g (FW). RESULTS Total phenolics and antioxidant potentials of porridges ranged from 5-73 TEAC(μg) /100g and 0.9- 34.2 GAEg/100g respectively. Significantly high (p ≤ 0.05) total phenolic contents were observed in C. auriculata ("Ranawara") [342 GAE mg/g (FW)] and in M. koenigii ("Karapincha") [199 GAEmg/g(FW)]. The highest antioxidant effect was in C. auriculata ("Ranawara") [73 TEAC(μg)/100g(FW)] followed by M. koenigi ("Karapincha") [26 TEAC(μg)/100g (FW)] and C. ternatea ("Ela Katarolu") [24 TEAC(μg)/100g (FW)]. Lowest antioxidant effect was in porridges made with rice and coconut milk both of which had comparable values. A positive correlation (correlation coefficient > 0.8) between total phenolics and the antioxidant potential was observed for all porridges except for Asparagus racemosus (Haathawariya) porridge which had a high antioxidant potential with a low phenolic content. CONCLUSIONS This study provides evidence that green leafy porridges are a good source of antioxidants in addition to their reported low glycaemic indices.

Enhancement of Antioxidant Quality of Green Leafy Vegetables upon Different Cooking Method
Antioxidant rich green leafy vegetables including garden spinach leaf, water spinach leaf, Indian spinach leaf, and green leaved amaranth were selected to evaluate the effects of water boiling and oil frying on their total phenolic content (TPC), total flavonoid content (TFC), reducing power (RP), and antioxidant capacity. The results revealed that there was a significant increase in TPC, TFC, ...
متن کاملAntioxidant and Anti-Inflammatory Activities of Kenyan Leafy Green Vegetables, Wild Fruits, and Medicinal Plants with Potential Relevance for Kwashiorkor
Background. Inflammation, together with related oxidative stress, is linked with the etiology of kwashiorkor, a form of severe acute malnutrition in children. A diet rich in anti-inflammatory and antioxidant phytochemicals may offer potential for the prevention and treatment of kwashiorkor. We selected and assayed five leafy green vegetables, two wild fruits, and six medicinal plants from Kenya...

An investigation was carried out with nine green leafy vegetables (GLV’s) with their popular varieties most commonly grown in India to determine their biochemical composition. Among leafy vegetables ascorbic acid was found maximum in Chenopod cultivar Bathua Local (60.6 mg/100 g fw.) followed by Pusa Bathua -1 (23.0 mg/100g fw.) and spinach cultivar PS-1 (51 mg/100 g fw.). Significantly high le...
