چکیده

AIM: The production of bacteriocins under temperatures close to those that can be found during conservation of milk products had to be investigated in order to retrieve maximal advantage of these naturally occurring anti-spoilage agents. METHODS: Cultivations of the BLIS producer strains were performed at 8 oC, and the cell number and the BLIS activities were determined at regular intervals. The growth parameters were analyzed by modeling with appropriate software. RESULTS: 1) low temperatures significantly reduce the BLIS activity of two of the strains, Enterococcus faecium 3587 and Enterococcus faecalis 3915, while in the third strain, Enterococcus durans M-3, it was stimulated; 2) For all strains bacteriocin activity was higher when cultivation was performed on MRS broth rather than on M-17, and 3) the three strains showed the typical growth for Enterococci in conditions of low temperature cultivation. CONCLUSIONS: Temperature stress can up-regulate or down-regulate the BLIS synthesis depending on the strain.

Biphasic kinetics of growth and bacteriocin production with Lactobacillus amylovorus DCE 471 occur under stress conditions.

Micro-organisms used during the production of fermented foods are subjected to several abiotic stresses. Microbial survival during these processes strongly depends on the ability of the cells to adapt and become more tolerant to the environmental conditions. Cultivation of Lactobacillus amylovorus DCE 471, a potential strain for use during type II sourdough fermentations, at low temperatures, u...

Characterization of Enterocins Produced by Enterococcus mundtii Isolated from Humans Feces

The aim of this study was to characterize bacteriocins produced by 70 strains of Enterococcus mundtii.Four strains exhibited antibiotic activity towards Listeria innocua, L. monocytogenes, Lactobacillus plantarum, and Salmonella Enteritidis. They remained active under temperatures of up to 121C for 20 min, and under pH treatments that varied from 2.0 to 10.0. Antimicrobial activity was maintain...

Coculture with specific bacteria enhances survival of Lactobacillus plantarum NC8, an autoinducer-regulated bacteriocin producer, in olive fermentations.

Bacteriocin production in Lactobacillus plantarum NC8 is activated by coculture with specific bacteriocin production-inducing bacterial strains. The system is further regulated by a three-component regulatory system involving a specific autoinducer peptide (PLNC8IF). We have used L. plantarum NC8 as a starter culture in Spanish-style green olive fermentations and examined the influence of cocul...

Production of bacteriocin by a novel Bacillus sp. strain RF 140, an intestinal bacterium of Caspian Frisian Roach (Rutilus frisii kutum)

Bacteriocins are proteinaceous antibacterial compounds that exhibit bactericidal activity against species closely related to the producer strain. The aim of this research was to investigate the production of bacteriocin by Bacillus spp. isolated from intestinal bacterial flora of the Caspian Frisian Roach (Rutilus frisii kutum). A bacteriocin produced by the bacterium Bacillus cereus strain RF ...

Effect of Physical and Chemical Changes on the Antimicrobial Activity of Culture Supernatant Fluid of Lactic Acid Bacteria

ABSTRACT         Background and Objective: Lactic acid bacteria are Gram-positive, catalase-negative, nonsporulating, either rod- or coccus-shaped bacteria that have beneficial effects on their hosts by producing antimicrobial substances such as lactic acid, hydrogen peroxide, bacteriocins and biosurfactants. Bacteriocins are antimicrobial peptides that a...
