The Effect of Rennin upon Casein
نویسنده
چکیده
The properties of the paracasein and casein preparations studied are compared in Table VI. See PDF for Structure I. Casein retains its characteristic solubility in NaOH: (1) after being exposed to a high degree of alkalinity during its preparation, (2) when recovered from partially hydrolyzed solutions in NaOH, and (3) after being kept for a prolonged time at the isoelectric point at 5 degrees C. II. It follows from I, that: (1) paracasein is not identical to casein modified by an excess of alkali, and that (2) this protein was not produced from casein by a partial hydrolysis of the latter in presence of NaOH.

The Action of Rennin on Casein
The changes produced by the action of rennin in milk and solutions of casein have been the subject of many investigations. Fremy’ was probably the first to give an explanation of this phenomenon. He believed the power to coagulate milk possessed by an extract of the mucous lining of a calf’s stomach to be due to the presence of an enzyme which converted some of the lactose of the milk into lact...
متن کاملThe Action of Rennin on Casein
In order to determine if the change from casein to paracasein results in the cleavage of any of the elements contained in the casein molecule, it is imperative that pure casein be used as a standard of comparison, and that the rennin activity be positively differentiated from any further proteolyt,ic activity of the enzyme under consideration; for it is quite evident that “Rennin action is prob...
متن کاملProteins of human milk. I. Identification of major components.
Traditionally, human milk proteins are identified largely by reference to bovine milk. Hence, to identify the major proteins in human milk, we subjected human and bovine milk, in parallel, to high-resolution two-dimensional electrophoresis. Isoelectric precipitation at pH 4.6 was our criterion for distinguishing whey proteins from those of the casein complex. The alpha- and beta-caseins were id...
متن کاملThe chaperone ability comparison of norma II-casein and modified d-casein upon interaction with lysozinie
Diminishing protein aggregation by chaperone is very important factor in medicine and industry. In this paper, itis induced the chaperone ability for 0-casein upon modification of its acidic residues by Woodward reagentK(WRK) and examined on lysozyme as a target protein at pH 7.2 and outlined the mechanism for chaperoneability of modified system by UV-Vis and fluorescence spectroscopy and theor...
متن کاملOn the Action of Coagulating Enzymes on Caseinogen.
Hammarsten [1872, 1874, 1877] first demonstrated that the rennin action on caseinogen was specific and independent of the action of the calcium salts. His explanation was that the caseinogen molecule was split up into a large molecule (Ruase) and a smaller one (Molkeneiweiss). The "Kiise" was rendered insoluble by the presence of soluble calcium salts and formed the clot. Since then little has ...
