Tomato Fruit (Lycopersicum esculentum Mill) Maturity Study Based on Sensorial Analysis and Instrumented Color Determination

چکیده
Table tomatoes (Lycopersicum esculentum Mill) have been tested during maturation process by carrying color determination by means of instruments as well as trough sensorial analysis, aiming to stablish data correlation between both methods. Recent picked testing fruits were selected by taking into account an uniform physiological maturation considered adequate for harvesting. Fruits were presented to a group of trained volunteers and employing a non-structured scale. Instrumental readings were carried by means of a “Macbeth” HUNTERLab equipment at five points selected on the transversal fruit axis. Sensorial color determination did not present significant difference (p ≤0.05) between the days 1, 3 and 5; 5 and 8; 10 and 12; and 12, 15, 17 and 19, however differences were noted between these groups. The fruits showed moderated characteristic colors between the 10th and 12th day and very characteristic colors from the 12th.

We aimed to isolate and identify yeasts found in the tomato fruit in order to obtain isolates with biotechnological potential, such as in control of fungal diseases that damage postharvest fruits. We identified Candida orthopsilosis strains LT18 and LT24. This is the first report of this yeast on Lycopersicum esculentum fruits in Brazil.

Drought stress reduces the yield and production of tomato (Lycopersicum esculentum Mill.). Tomato does not naturally accumulate glycinebetaine (GB) in the cells under natural conditions. Effects of exogenous glycinebetaine on some morpho-physiological characteristics of Lycopersicum esculentum Mill. cv. PS was evaluated at different levels of drought stress. The experiment was conducted in a fa...
متن کاملMolecular Insights Reveal Psy1, SGR, and SlMYB12 Genes are Associated with Diverse Fruit Color Pigments in Tomato (Solanum lycopersicum L.).
The color of tomato (Solanum lycopersicum) fruit flesh is often used as an indicator of quality. Generally, fruit color is determined by the accumulation of carotenoids and flavonoids, along with concomitant degradation of chlorophylls during ripening. Several genes, such as phytoenesynthetase1 (Psy1), STAY-GREEN (SGR), and SlMYB12, have been extensively studied to elucidate the genes controlli...
متن کاملANALYSIS OF THE EFFECT OF MATURITY STAGE ON THE POSTHARVEST BIOCHEMICAL QUALITY CHARACTERISTICS OF TOMATO (Lycopersicon esculentum MILL.) FRUIT
Quality characteristics of tomato fruit will be affected by a number preand post harvest factors. In this study, the effect of maturity stage on post harvest quality characteristics of tomato was investigated. Tomato fruits of the same farmers‟ variety were harvested at mature-green, medium ripe and full-ripe stages. After harvesting, tomato samples were sliced and homogenized in blender for pr...
