چکیده
Calves weaned on cowcalf operations throughout Arkansas even tually move on to stocker, feedlot and packer operations. Wide variations in carcass uniformity and consistency exist among these calves. Potential carcass problems can include inappro priate carcass size and weight, i nadequate tenderness, insufficient intramuscular fat (marbling) and excess external fat cover. Many of these quality challenges facing the beef industry can be addressed through use of beef carcass informa tion (parental and progeny) and improved genetic selection practices.

Understanding and Improving Beef Cattle Carcass Quality
Interest and questions about the quality of beef are on the rise due to heightened awareness about the marketing of beef, from procurement and processing to consumer acceptance. Belatedly, producers are now beginning to receive information about the quality of the beef they produce. Consolidations among beef marketers have resulted in better communication between marketers and producers on carc...

In some instances, value-based marketing systems can be economically advantageous to cattle producers. Monetary rewards are sometimes available for producing a high-quality, consistent end product that meets consumer demands. One tool that can help producers in the efficient and profitable production of beef cattle is live animal carcass ultrasound. This gives cattle producers the ability to ma...
متن کاملThe Genetic Improvement of Carcass Composition in Beef Cattle
Although carcass trait selection programs have primarily focused on carcass marbling (quality grade), recent changes in the North American beef industry will very likely increase the economic importance of carcass composition (yield grade). Ultrasound technology is a valuable tool in these efforts. This review summarizes recent research pertaining to the role of ultrasound in improving carcass ...
متن کاملRelationship of the bovine growth hormone gene to carcass traits in Japanese black cattle.
The bovine growth hormone gene (bGH) possesses three haplotypes, A, B and C, that differ by amino acid mutations at positions 127 and 172 in the fifth exon: (leucine 127, threonine 172), (valine 127, threonine 172) and (valine 127, methionine 172) respectively. The correlation between meat quality or carcass weight and these haplotypes was investigated in Japanese black cattle. Altogether, 940 ...
متن کاملBeef Carcass Chilling: Current Understanding, Future Challenges
Introduction Chilling freshly harvested beef carcasses is necessary for food safety and quality purposes. Before mechanical refrigeration, meat either had to be consumed immediately after slaughter or be preserved through salting, curing, and/or smoking. With the advent of mechanical refrigeration and networks of refrigerated carriers, the production, processing, and distribution of carcasses a...
