Global, Regional and Local food chains: an assessment of sustainability performance of wheat-to-bread chains across Italy and the UK

چکیده
A growing number of consumers are concerned with the impacts of consumption choices. Local food supply chains are increasingly being discussed for their potential to overcome the impacts of global and more industrialized chains. However, opposition between local and global food systems is being questioned and distinctions are ambiguous. Can sustainability performance be assessed in relation to local and global food chains? This paper develops a comparative assessment of wheat-to-bread supply chains. Key attributes are selected to collect data for measuring the performance of supply chains along the global-local continuum within five sustainability dimensions. Using a participatory approach, the research explores stakeholders’ perspectives on sustainability of these chains and assesses the contribution of supply chains of different lengths towards sustainability objectives. The most relevant attributes and the relations (correlations and tradeoffs) between them are highlighted. The analysis sheds light on sustainability performance and the participatory assessment reveals conflicting perceptions of sustainability and how this is perceived along the local-global continuum

Handling Diversity of Visions and Priorities in Food Chain Sustainability Assessment
Food chain sustainability assessment is challenging on several grounds. Handling knowledge and information on sustainability performance and coping with the diversity of visions around “what counts as sustainable food” are two key issues addressed by this study. By developing a comparative case study on local, regional and global wheat-to-bread chains, and confronting the multidimensionality of...
متن کاملComparing the Sustainability of Local and Global Food Chains: A Case Study of Cheese Products in Switzerland and the UK
Local food has recently gained popularity under the assumption that it is more sustainable than food from distant locations. However, evidence is still lacking to fully support this assumption. The goal of this study is to compare local and global food chains in five dimensions of sustainability (environmental, economic, social, ethical and health), covering all stages of the chain. In particul...

The majority of sustainability assessments of the bio based industries are primarily focused on the environmental and economic aspects, while social impacts are rarely considered. While overlooking social dimension can have a serious harmful impact across supply chains. To address this issue, this study proposes a modified systemic approach for a social sustainability impact assessment of the te...
متن کاملSustainability of Local and Global Food Chains: Introduction to the Special Issue
Sustainability assessment is one of the keys to competition by food supply chains over sustainability. The way it is conceived and embodied into decision-makers’ choices affects the competitiveness of local and global chains. Science-based assessment methodologies have made substantial progress, but uncertainties—as well as interests at stake—are high. There are no science-based methods that ar...
