A comparison of heat treatment and ascorbic acid on controlling enzymatic browning of fresh-cuts apple fruit
نویسندگان
چکیده
Enzymatic browning of apple fruits (Malus × domestica Borkh.) is the main factor responsible for quality deterioration in processed products such as juice, fresh-cut slices and chips. The fresh slices of apple were dipped in 1% ascorbic acid solution for one min and hot water with 50°C for two min. The results showed that both heat and ascorbic acid treatments could significantly reduce cut surface browning, although ascorbic acid treatment was some more effective. The both treatments showed inhibitory effects on PPOs and POD enzymes in related to enzymatic browning in fresh cut browning, although hot water treatments was some more effective than ascorbic acid on suppressing both monophenolase and diphenolase activity of PPOs and POD enzymes.

The market sales of ready to use fresh cut fruits have grown rapidly in recent decades. Kiwi fruit is an important fruit that its marketing as fresh cut has increased in recent years. The main limiting factors in shelf life of fresh cut fruits are microbial spoilage, drastic softening and browning. In this study, the effects of oxalic and citric acids, both at 0, 2, 4 and 6 mM concentrations, w...

Enzymatic browning, which accompanies food preservation processes based on drying, is a common obstacle to obtaining marketable and consumer-appealing products. In this paper, we investigate the application of one of the methods commonly used in order to counter the browning process, namely dipping. Dipping involves a soaking of the foods in liquids or solutions in order to suppress the activit...

In order to determine the effect of different Ca sources, in improving enzymatic activity and some qualitative properties of red apple (Malusdomestica) an experiment was carried out in a completely randomized design. Apple trees were sprayed 5 times with CaCl2, CaO, Ca-EDTA and Ca(NO3)2 salts with an interval of 20 days from late June until early October. After harvesting fruits were kept in co...

The effects of honey solutions on preventing browning discoloration and maintaining visual appearance in fresh-cut ‘Nam Dok Mai’ mango fruit and the comparison of honey dip and commercially used citric acid and ascorbic acid dips were investigated. The mango cubes were dipped in honey solutions at the concentration of 0, 5, 10, 15, 20 or 25 % (v/v) and the visual appearance and browning intensi...
متن کاملAntibrowning and antimicrobial properties of sodium acid sulfate in apple slices.
There are few available compounds that can both control browning and enhance microbial safety of fresh-cut fruits. In the present study, the antibrowning ability of sodium acid sulfate (SAS) on "Granny Smith" apple slices was first investigated in terms of optimum concentration and treatment time. In a separate experiment, the apple slices were treated with water or 3% of SAS, calcium ascorbate...
