Effect of Breed and Sex on Carcass Characteristics and Meat Chemical Composition of New Zealand White and Californian Rabbits under Upper Egyptian Environment

The present study was carried out to study the carcass and meat quality traits of two breeds of [New Zealand White (NZW) and Californian (CAL)] under environmental conditions in Egypt. Two hundred of NZW and CAL (100 rabbits of each bread of 50 males and 50 females) aged and slaughtered at 12 weeks .The following traits were recorded: body weight at slaughter age carcass weight, meat, fat and ash content of carcass, prime cuts weight and dressing percentage. The results indicated that, Overall dressing yields averaged 48.1, 52.9 and 58.1 % in respect to hot carcass, hot carcass plus giblet, and hot carcass plus giblet and dressed head, respectively. The dressing yield was more (P>0.05) in NZW than CLA, and it was higher (P>0.05) in males than females in NZW breed. Statistically breed and sex had no significant effects on various carcass characteristics except for the dressing yield of carcass plus giblet and dressed head . The rabbit meat is high in protein (20.3%) and low in fat (8%). The breed and sex had no significant effects on various meat quality traits.
