Molecular Mobility of Sucrose in Aqueous Solution Studied by 13C NMR Relaxation

From the tem perature and concentration dependence o f the 13C spin lattice relaxation times o f the 12 carbon atom s o f the sucrose molecule the ro ta tional dynam ics o f the sugar molecules are determ ined. N o indication for conform ational m obility o f the rings is found. The exocyclic hydroxym ethyl groups possess extra m obility. The m odels used for the description are critical ly discussed. The tem perature dependence o f the ro ta tional m obility is described by a VTF equation. The concentration dependence o f the ideal glass transition tem perature T0 for this m obility is derived.
