Carbon-13 nuc lear m agnetic re sonance (C N MR) spe ctroscopy w as applied t o de termine the fa tty ac id positional composition of triacylglycerols in vegetable oils with oleic acid percentages “higher and lower than 50%” and with linolenic acid percentages higher than 5%. In particular, conventional C NMR spectroscopy which applies the basic one-pulse sequence for signal averaging, was used to determine on the basis of carboxy and unsaturated carbon resonances, the compositions of two different pools of fatty acids at the 1,3and 2-positions of triacylglycerols. The results confirmed that the chains at 1,3and 2triacylglycerol positions deviated from the 1,3-random-2-random distribution pattern at variable extents depending on the chain concentration in the total triglyceride of oil samples. However, two factors were likely to regulate the chain distribution between 1,3and 2-glycerol positions, namely the concentration of fatty acids in the total triglyceride and their positional specificity.

Determination of the fatty acid profile by 1H-NMR spectroscopy
The common unsaturated fatty acids present in many vegetable oils (oleic, linoleic and linolenic acids) can be quantitated by 1H-nuclear magnetic resonance spectroscopy (1H-NMR). A key feature is that the signals of the terminal methyl group of linolenic acid are shifted downfield from the corresponding signals in the other fatty acids, permitting their separate integration and quantitation of ...
متن کاملComposition of human VLDL triacylglycerols after ingestion of olive oil and high oleic sunflower oil.
This work was undertaken to determine the effect of diets enriched with olive oil or high oleic sunflower oil on very low density lipoprotein (VLDL) triacylglycerol composition of healthy human subjects. Both oils contain a similar proportion of monounsaturated fatty acids (MUFA) but differ in their triacylglycerol composition. All 22 human subjects initially consumed a low fat, high carbohydra...
متن کاملFatty Acid Composition of Edible Oils and Fats
The content of fatty acids as well as the ratio between unsaturated and saturated fatty acids is important parameter for determination of nutritional value of certain oil. Therefore the newest trend in food processing industry is notifying the composition of edible oils and other food commodities for the content of each individual fatty acid. The main objective of this work was to identify the ...

This study was conducted to determine optimal ratios of dietary linolenic acid (18:3n-3, LnA) to linoleic acid (18:2n-6, LA) for Tor tambroides. Juveniles were fed three trial diets with different ratios of LnA/LA (0.0, 0.5 and 1.0) for 10 weeks. Another diet contained 100% palm oil, which was similar tothe diet with 0.0 LnA/LA ratio but different in total amounts of C18polyunsaturated fatty ac...
