چکیده

The regulation of starch synthesis in the starch-storing organs of higher plants-organs such as tubers, the embryos of grain legumes, and the endosperms of cereals, in which starch constitutes 50 to 80% of the dry weight at maturity-is complex and poorly understood. Our ignorance of this process has been highlighted by the recent upsurge of interest in starch synthesis, fueled largely by the possibility of producing nove1 starches by genetic modification. Details of the metabolic pathway itself remain the subject of controversy, and remarkably little is known of the factors that determine either the rate of synthesis or the structure of the starch in storage organs. Some widely accepted views about the regulation of starch synthesis are no longer tenable or require revision in the light of recent findings. We shall discuss briefly the nature of the pathway of starch synthesis, then examine critically the current ideas about factors that determine the flux through the pathway and two important aspects of starch structure: the ratio of amylose to amylopectin and the branching of amylopectin.

Starch biosynthesis.

Starch is the most significant form of carbon reserve in plants in terms of the amount made, the universality of its distribution among different plant species, and its commercial importance. It consists of different glucose polymers arranged into a threedimensional, semicrystalline structure-the starch granule. The biosynthesis of starch involves not only the production of the composite glucan...

Cadmium Toxicity: The Investigation of Cd Toxic Level In Different Organs of Cherry Tomato Plant and The Effect of Cd Accumulation

This research was done in hydroponic environment in greenhouse at 3 stages (vegetative, flowering and full product) in 5 concentrations of Cd (0.1, 0.3, 0.9, 2.7, and 10 mm) for investigating physiological and biological effects. This study revealed that the increase of Cd concentration in understudy treatments causes the 49% reduction of sugar solution in 10 mm treatment. On the other hand, th...

Evaluation of some changes in biochemical parameters of Iranian lily (Lilium ledebourii var. Kelardasht Salehi1) bulbs during a growth and development cycle

Understanding the relationships between biochemical contents and morpho-phenological aspects of a plant during life cycle would be helpful for doing precise agricultural practices through its cultivation. In the present study, various biochemical parameters were evaluated in relation to bulb storage, shoot growth and florogenesis in Iranian lily (Lilium ledebourii var. Kelardasht Salehi1). Ten ...

Starch and sugar conversion in Dioscorea esculenta tubers and Curcuma longa rhizomes during storage

An investigation was carried out to reveal the changes in the concentration of soluble carbohydrates under tuber dormancy in food yam (Dioscorea esculenta) tubers and in an economically important spice cum medicinal plant turmeric (Curcuma longa) rhizomes under storage. Harvested, fully matured tubers of yam and rhizomes of turmeric were stored in wooden boxes under the conditions of 28 ? 2?C t...

Changes in Wheat Starch Crystallinity During Staling of Flat Breads: Effects of Protein on Retrogradation

ABSTRACT: The crystallinity of wheat starch in two types of flat breads was studied using Differential Scanning Calorimetery. Three types of flours with different proteins of 9.4, 11.6 and 13.5% were prepared and two different types of flat breads with thicknesses of 2 and 3 millimeters were baked from each flour. The crystallization enthalpy (∆H), peak temperature (Tp) and onset point temperat...
