Antioxidant activity of Tomato skin, seeds and pulp

چکیده
Tomato is a versatile vegetable that is consumed fresh as well as in the form of processed products. More recently, there has been renewed attention given to the antioxidant content of tomatoes because many epidemiological studies suggested that regular consumption of fruits and vegetables, including tomatoes, can play an important role in preventing cancer and cardiovascular problems. Approximately one-third of the total weight of tomatoes in the form of skin and seeds is discarded during processing of tomatoes into paste. Researchers from New Zealand studied the major antioxidants and antioxidant activity in different fractions (skin, seeds and pulp) of three tomato cultivars (‘Excell’, ‘Tradiro’ and ‘Flavourine’) grown under hydroponic conditions in a commercial greenhouse in New Zealand. It was found that the skin fraction of all cultivars had significantly (P<0.05) higher levels of total phenolics, total flavonoids, Antioxidant activity of Tomato skin, seeds and pulp

Antioxidant activity in different fractions of tomatoes
The objective of this study was to determine the major antioxidants and antioxidant activity in different fractions (skin, seeds and pulp) of three tomato cultivars (Excell, Tradiro and Flavourine) grown under hydroponic conditions in a commercial greenhouse in New Zealand. It was found that the skin fraction of all cultivars had significantly (p < 0.05) higher levels of total phenolics, total ...
متن کاملContents of phenolics and flavonoids and antioxidant activities in skin, pulp, and seeds of miracle fruit.
Miracle Fruit (Synsepalum dulificum) has been studied because of its unique taste modifying properties. This study investigated contents of phenolics, flavonoids, and antioxidant activities in skin, pulp, and seeds of Miracle Fruit. The free phenolic content in skin was almost 3 times of that in pulp and 4 times of that in seeds. Skin contributed 43.96% of free phenolic compounds with 15.91% of...

Food processing by-products are commonly used as feed ingredients for livestock. Wet tomato pulp is byproduct containing tomato seeds and skin residues and obtained during processing of tomatoes for paste, juice, ketchup etc. Tomato production in Turkey was around 10 million tons and approximately 3 million tons tomatoes were used for processing of tomatoes in 2010 [48]. During production of to...
متن کاملAntioxidant and Antiplatelet Activities in Extracts from Green and Fully Ripe Tomato Fruits (Solanum lycopersicum) and Pomace from Industrial Tomato Processing
The consumption of fruits and vegetables is accepted to be one of the strategies to reduce risk factors for these diseases. The aim of this study was to examine potential relationships between the antioxidant and the antiplatelet activities in green mature and fully ripe (red) tomatoes and of lycopene-rich byproducts of tomato paste processing such as pomace. The total phenol content of tomato ...
متن کاملPlant food allergy – is it time to see the seeds?
Allergic reactions to fruits and vegetables are frequently observed, however skin prick tests and serological analyses may not always confirm allergy. Recent advances have identified the seeds as potential allergen sources. Seeds are generally rich in storage proteins like 7S/11S globulins and 2S albumins, which are allergens known to be linked to severe reactions. For a number of plant food, s...
