Mechanisms for Sweetness

چکیده
A remarkable amount of information has emerged in the past decade regarding sweet taste physiology. This article reviews these data, with a particular focus on the elucidation of the sweet taste receptor, its location and actions in taste transduction in themouth, its nontaste functions in the gastrointestinal tract (e.g., in enteroendocrine cells), and the brain circuitry involved in the sensory processing of sweet taste. Complications in the use of rodents to model human sweet taste perception and responses are also considered. In addition, information relating to low-calorie sweeteners (LCS) is discussed in the context of these issues. Particular consideration is given to the known effects of LCS on enteroendocrine cell function. J. Nutr. doi: 10.3945/jn.111.149567.

Brain mechanisms of sweetness and palatability of sugars.
Sugars are sweet and palatable. Sweetness is detected by the neural system, whereas palatability may be detected within the neural and chemical systems in the brain. Sweetness is discriminated from other tastes by different receptor sites on taste bud cells, a different subset of fibers in the taste nerves, and different projection zones in the brain. The benzodiazepine and opioid systems are r...
متن کاملIs the Association Between Sweet and Bitter Perception due to Genetic Variation?
Perceived intensities of sweetness and bitterness are correlated with one another and each is influenced by genetics. The extent to which these correlations share common genetic variation, however, remains unclear. In a mainly adolescent sample (n = 1901, mean age 16.2 years), including 243 monozygotic (MZ) and 452 dizygotic (DZ) twin pairs, we estimated the covariance among the perceived inten...

متن کاملPotential quality evaluation method for Radix Astragali based on sweetness indicators.
Sweetness is a traditional sensory indicator used to evaluate the quality of the popular Chinese herb Radix Astragali (RA). RA roots with strong sweetness are considered to be of good quality. However, neither a thorough analysis of the component(s) contributing to RA sweetness, nor a scientific investigation of the reliability of this indicator has been conducted to date. In this study, seven ...
متن کاملInvestigating age-related changes in taste and affects on sensory perceptions of oral nutritional supplements.
BACKGROUND sip feeds are oral nutritional supplements (ONSs) that are commonly prescribed to malnourished patients to improve their nutritional and clinical status. However, ONSs are poorly consumed and frequently wasted, with sweetness being identified as one of the factors leading to patients' dislike of ONSs. OBJECTIVES to investigate if age affects sweetness thresholds and if this impacts...
