The specific distribution of fatty acids in the glycerides of vegetable fats.

چکیده
Earlier studies of several vegetable fats (1, 2) demonstrated that the saturated fatty acids of the triglycerides are found almost exclusivelyin the Iand 3-positions. The saturated acids in these species were predominantly palmitic and stearic. The advent of suitable gas-liquid chromatographic techniques makes possible a more detailed study of the distribution of individual fatty acids in triglycerides. This report covers a number of seed fats that contain fatty acids, both saturated and unsaturated, having a chain length of more than 18 carbon atoms. These fatty acids also show a specific distribution in that they are found almost exclusively in the land 3-positions of the triglyceride molecule.

متن کاملThe specific distribution of fatty acids in the glycerides of animal and vegetable fats.
The structure of naturally occurring triglycerides has been studied over a number of years with little agreement about the distribution of the fatty acids, except as to the prevalence of mixed glycerides. Several types of arrangement, for example, even, random, partial random, and restricted random, have been proposed and defended. Hilditch (I) and Bhattacharyya (2) have recently reviewed the b...

Background and Objectives: High intakes of saturated and trans fatty acids can increase risks of cardiovascular diseases and cancers. Therefore, removal of partially-hydrogenated vegetable oils containing trans fatty acids has been suggested as one of the most effective health interventions. The aim of the current study was to investigate the policy effects of decreasing trans fatty acids in pa...
متن کاملIs Trans Fatty Acid Still an Issue for Policy Makers in Iran? A Technical Report
In recent decades, the oil industry has changed its direction toward vegetable oil use instead of animal fats due to various reasons such as a small numbers of animal fat resources and high saturated fatty acids content in animal fats. Therefore, different modification processes have been used to alter the physicochemical properties of vegetable oils, which lack functionality and oxidative stab...
