چکیده

• The effects of temperature on the development of rigor mortis in cardiac muscle have never been investigated systematically. Brecher and Kissen found that pressure-volume characteristics of non-beating, submerged dog ventricles remained constant for at least 30 minutes following circulatory arrest at 35°C. Using similar methods, Griggs et al. found this period to be approximately 80 minutes at 36°C and 300 minutes at 5°C. These and other related studies of rigor mortis" were not primarily directed at the effects of varying temperature under controlled conditions. We have therefore adapted the technique of Brecher and Kissen to permit systematic investigation of tlie effects of temperature on the onset and development of rigor mortis in dog hearts. This study provides a background for future investigations in which the time limits for development of rigor mortis must be known.

Traceability of rigor mortis of muscle using a texture analyzer: a feasibility study

Rigor mortis is one of the most important changes of muscle at earlier time postmortem, which ultimately affects meat palatability. However, there seems no efficient way to track the whole process of rigor mortis continuously and automatically. This study is designed to explore a new method to realize the traceability of the onset and development of rigor mortis of muscles using a texture analy...

Changes in phosphate compounds during the development and maintenance of rigor mortis.

Rigor mortis was induced in frog sartorii from female Rana pipiens by incubating the isolated muscles in 0.38 mr.x 2,4dinitrofluorobenzene Ringer’s (frog) solution for 90 min at 0”. This compound completely inhibits adenosine triphosphatecreatine phosphotransferase in viva and eventually induces rigor mortis as characterized by shortening of the muscle to 50% of its rest length and the developm...

Correlations among Stress Parameters, Meat and Carcass Quality Parameters in Pigs

Relationships among different stress parameters (lairage time and blood level of lactate and cortisol), meat quality parameters (initial and ultimate pH value, temperature, drip loss, sensory and instrumental colour, marbling) and carcass quality parameters (degree of rigor mortis and skin damages, hot carcass weight, carcass fat thickness, meatiness) were determined in pigs (n = 100) using Pea...

Diastolic pressure-volume relationship in the canine left ventricle.

Analysis of the passive pressure-volume filling curve of the left ventricle demonstrates that heart size and ventricular geometry exert major effects on the pressure-volume curve in the absence of changes in intrinsic muscle stiffness. Because the pressure-volume relationship is curvilinear, both quantitative and qualitative comparison of pressure-volume curves from different hearts is difficul...
