Yeast mannoproteins: Organoleptic modulating functions, mechanisms, and product development trends in winemaking

Mannoproteins (MPs) originate from yeast cells and can play important roles in maintaining wine stability modulating organoleptic properties. Due to their natural presence wines, MP products are allowed be used as enological additives industry. To guarantee an appropriate application of these during winemaking, it is necessary for both researchers winemakers understand the mechanisms MPs multifunctional modulators. This review has introduced current state knowledge researches focus on different red wines also interactions between sensory active components (polyphenols, aroma compounds) model solutions. We have summarized possible that affect color, astringency, relationship physicochemical characteristics functionalities MPs. Besides, development trends discussed. It seems biomass, especially those non-Saccharomyces yeasts show good potential producing large quantities MPs, combination cultivation preservation methods with extraction purification techniques may obtain ideal production, purity, functionality industrial scale, which should put more efforts by scientists manufacturers future.
