چکیده

The volatile organic compounds (VOCs) formed during winemaking can be modulated by several additives, namely the use of sulphur dioxide (SO 2 ) which has been well-accepted on as a preservative agent. However, some drawbacks associated with SO wine application led to need reduce or replace its use. In this work, VOCs profile after storage in bottle under different antioxidant conditions two Portuguese monovarietal wines (‘Arinto’ and ‘Síria’) was studied. Wines were obtained environments (0, 50, 100 mg/L ascorbic acid for ‘Síria’ 15, 30, 45 ‘Arinto’ both without bentonite). After alcoholic fermentation, second treatment applied: 0 60 30 wines. kept over lees three months, bottled analysed months bottle. present HS-SPME-GC/MS six fermentation. maturation did not influence evolution free total . Regarding evolution, ANOVA analysis showed that esters are most important group, presenting significant differences among samples. Through PCA analysis, using fermentation reference, 74.13 % 54.92 variation explained first principal components ‘Síria’, respectively. seems mainly influenced conditions.

Microbiological spoilage and investigation of volatile profile during storage of sea bream fillets under various conditions.

Volatile organic compound (VOC) profile was determined during storage of sea bream (Sparus aurata) fillets under air and Modified Atmosphere Packaging (MAP - CO2/O2/N2: 60/10/30) at 0, 5 and 15°C. Microbiological, TVB-N (Total Volatile Base Nitrogen) and sensory changes were also monitored. Shelf-life of sea bream fillets stored under air was 14, 5 and 2days (d) at 0, 5 and 15°C respectively, w...

Volatile compounds of red and white wines by headspace--solid-phase microextraction using different fibers.

The behavior of four fibers [polydimethylsiloxane (PDMS), PDMS-divinylbenzene (DVB), carboxen (CAR)-PDMS, PDMS-DVB-CAR), is tested for the analysis of volatile compounds of white and red wine. The PDMS-DVB-CAR fiber is the most appropriate to obtain the most wide volatile profile of wines. The better extraction conditions are 40 min at 35 degrees C. Satisfactory data about the reproducibility a...
