Abstract The added value of Lactobacillus acidophilus encapsulation due to its production process is one the first things that need be known in calculating techno-economic analysis determine sustainability downstream. result value-added plays an important role determining which formulation, encapsulate material, and should used. inoculum media used were skimmed milk whole milk, coating material this study was Eucheuma cottonii , while variations spray-drying freeze-drying methods. There four treatments research analyzed their value. Determination best treatment carried out through scoring method on cell viability, morphology, effectiveness, costs, cost supporting materials, product. Added using Hayami Kawagoe Based results, it can concluded most influenced by costs. selected E. fresh inoculation medium, with overall score 22.
