Epilactose is a functional sugar that can be produced from lactose using cellobiose 2-epimerase and it considered developing prebiotic. In sense, the development of strategies to produce purify epilactose key for its wider use in food industry. The aim this work was establish food-grade purification strategy suitable scaled-up an industrial level. Firstly, by enzymatic epimerization reaction catalyzed recombinant Caldicellulosiruptor saccharolyticus Saccharomyces cerevisiae.
