The Proportion of Blue Light from Light-emitting Diodes Alters Microgreen Phytochemical Profiles in a Species-specific Manner

Microgreens are specialty vegetables that contain human health-promoting phytochemicals. Typically, microgreens cultivated in controlled environments under red and blue light-emitting diodes (LEDs). However, the impact of varying proportions these light qualities on composition diverse phytochemicals indoor-grown is unclear. To address this problem, levels chlorophylls, carotenoids, ascorbates, phenolics, anthocyanins, nitrate were examined arugula ( Eruca sativa L.), ‘Red Russian’ kale [ Brassica napus L. subsp. var. pabularia (DC.) Alef.], ‘Mizuna’ mustard juncea cabbage oleracea capitata f. rubra ) following cultivation LEDs supplying (5% to 30%) (70% 95%). Varying proportion did not affect extractable total chlorophyll, or all four microgreen species. Generally, reduced ascorbate greatest arugula, kale, at 20% light, a minor decrease was apparent 30% light. These metabolite profiles impacted by percentage cabbage.
