The paper presents experimental data on the use of pectolytic and cellulolytic enzymes their compositions (Fructozym P6-L, Lafazym Extract, Cellolux-A) for processing apple pulp from Krasnoyarsky Snegirek fruits. aim this study is to select enzyme preparations pulp, which allow maximize must yield, increase content phenolic compounds provide high filtration rate. Technological physico-chemical characteristics obtained wort samples are experimentally determined.
