Study on physicochemical properties of purple waxy wheat starch

Morphological features and physicochemical properties of purple waxy wheat 168 (PWW168) starch were compared with those normal maize starches. The morphologies PWW168 found to be similar for starch. All three crop starches exhibited typical A-type crystallinity. However, had lower apparent amylose content higher degree crystallinity than These differences resulted in a light transmittance, swelling power solution, freeze-thaw stability, peak viscosity, breakdown retrogradation percentage, final viscosity setback information suggested that should have greater resistance under cooling conditions. Highlighting the characteristics could provide effective application food industry.Abbreviations: AAC, content; SP, power; FTC, cycles; PV, viscosity; TV, trough BD, FV, SB, PT, pasting temperature.
