Scientific challenges in modeling mastication of meat using engineering tools

This paper gives an overview of scientific challenges that may occur while performing modelling meat (as a product) and simulating mastication by using engineering tools. To evaluate these challenges, Failure Mode Effect Analysis method has been employed to assess six tools often used in analyzing different perspectives food oral processing. As result, risk priority number comprising severity the failure, occurrence probability failure difficulty detect calculated. Results show finite element emotion detection are two with highest levels risks. The first is known solution for types materials, but when it comes as very complex anisotropic material, inadequate calculations high. Emotion not so much dependent on product consumed imperfections software recognizing false emotions Findings indicate more research needed sophisticated use Further studies should include other models simulate breakdown during mastication, role saliva jaw movement aim carry out full average consumer.
