Pseudocereals, with their irreplaceable nutritional composition and amounts of bioactive substances a positive effect on human health, are becoming trend in nutrition. In this work, we compared the safety individual types pseudocereals, namely buckwheat (Fagopyrum esculentum var. Zita), quinoa (Chenopodium Carmen), amaranth (Amaranthus cruentus Pribina), sorghum (Sorghum bicolor Ruzrok) terms content hazardous metals. We assessed ability species pseudocereals to accumulate metals from soil consumable parts plant. The heavy was calculated using bioaccumulation factor. also evaluated influence selected antioxidant capacity grains pseudocereals. determined total polyphenol DPPH (2,2-diphenyl-1-picrylhydrazyl) radical spectrophotometrically. by AAS method (Atomic Absorption Spectrometry). all plots cultivated recorded an increased Cd, Pb, Co comparison limit value set Law no. 220/2004. risk elements not exceeded consumption plants Cd Pb below detection limit. From point view, it is possible prefer Chenopodium quinoa, which had lowest grains. Buckwheat follow, at about same level sorghum. safest or most resistant plant grains, group crops monitor, quinoa.
