Preparation and Characterization of Carboxymethyl Cellulose Production from Oil Palm Male Inflorescence as Food Stabilizer

Male inflorescence residue of the oil palm rich in fibre and contains cellulose content has potential to synthesize Carboxymethyl Cellulose (CMC). is considered necessary removed early stages cultivation process develop stem size, string robust root systems. This activity generates plentiful male residues plantation. The aim this research synthesis characterize CMC fabricated from (OPMI-CMC) waste for use as an ice cream stabilizer, using a variety treatments, which are commercial 0.2%, OPMI-CMC 0.1%, 0.3%. results showed that can be produced organic flowers plants. water content, pH, purity, degree substitution meet standard. optimal concentration stabilizer 0.3% based on melting time overrun value. FTIR analysis shows main functional group highly comparable. Therefore, possibly employed alternative food stabilizers, other standards must fulfilled, further required.
