PHYSICOCHEMICAL PROPERTIES OF CAROB SYRUP REVEAL D-PINITOL AS AN INDEX OF SUCROSE SUPPLEMENTATION

The carob syrup has been attracted the interest of consumers as an alternative sweetener due to its superiority against refined ones. Bioactive phytochemicals and polyols, vitamins minerals are present in syrup; whereas sucrose, fructose glucose main sugars. Although prefer for special composition, sucrose supplementation is a common adulteration abating health benefits. detection natural sweeteners honey usually required time-consuming advanced analytical techniques. In study, physicochemical properties were studied pinpoint parameters supplementation. More specific, moisture, fats, pH, color total soluble solids determined. Furthermore, sugar composition syrups was using chromatographic separation. Finally, phenolic fraction antioxidant activity estimated. Results showed significant differences moisture contents, but these linked with preparation procedure. unexpected fluctuation observed D-pinitol phenolics contents. Thus, both determined genuine sucrose-supplemented syrups. Based on our findings can be detected by content ratio. Therefore, work demonstrated potential simple separation detect traditional Mediterranean product.
