Paradoxical risk mitigation behavior in private households

More than 40% of registered foodborne outbreaks can be attributed to unsafe food handling practices in private households (World Health Organization (WHO), 2016). Although represent the final stage chain (where mitigation safety risks would vital), consumers generally do not consider themselves a responsible actor this respect (Taché & Carpentier, 2014). Poor hygiene and are among major risk factors for household-related illnesses, specifically cross-contamination inefficient handwashing. In work, we present two studies which analyzed aspects poultry habits consumers. Study 1 was an in-home behavior observation study involving 15 households. Besides handwashing, washing meat sink most problematic behavior. Salmonella and/or Campylobacter spp. were detected 47% samples taken during home visits. 2 nationally representative household survey (N = 1007). 83% respondents reported that they washed before preparation.
