In this research, optimal conditions for encapsulation menthol, major component peppermint oil, into zein nanocapsules were investigated. The controlling factors govern efficiency procedure include solvent used dissolution zein, concentration menthol solvent, mass ratio menthol/zein, product solution. research reveals how highest can be achieved by producing at conditions. also indicates finding applied case many other chemical compounds making use phase diagram solute/ethanol/water.
