Operationalizing sustainable food systems through food programs in elementary schools

Healthy eating supports optimal growth, development, and academic achievement. Yet, the diet quality of school-aged children is poor. Food insecurity chronic disease are concerns, as unsustainable agricultural practices. Sustainable food systems have a low environmental impact can address both dietary sustainability concerns. This multi-case study was conducted in two Community Schools mid-sized Canadian city. Data collected through interviews, observations, checklist, curriculum policy review. The purpose this to understand capacity local elementary schools implement sustainable strategies curriculum, policy, practice. Teachers were doing some cooking gardening with students, recycling. There no specific policies. Infrastructure challenges varied by school. Insufficient funding resources seen barriers implementing systems. Staff characteristics relationships facilitators. be positioned strong leaders area school prioritizing literacy system developing supportive policies, including community members students programming, experiential production opportunities for all students.
