Nutritional Improvement of Bean Sprouts by Using Chitooligosaccharide as an Elicitor in Germination of Soybean (Glycine max L.)

Soybean sprouts are among the healthiest foods consumed in most Asian countries. Their nutritional content, especially bioactive compounds, may change according to conditions of germination. The purpose this study was test effect chitooligosaccharide with different molecular weight and dosage on quality enzymatic antioxidant activities soybean sprouts. elicitor strongly stimulated accumulation vitamin C, total phenolics, flavonoid. stimulation correlated concentration chitooligosaccharide. With treatment 0.01% 1 kDa chitooligosaccharide, nine phenolic constituents six isoflavone compounds were significantly increased. capacity (DPPH radical hydroxyl scavenging activity) antioxidase (catalase peroxidase) also enhanced after degree chitooligosaccharide-induced activity increased as decreased. These results suggest that soaking seeds a solution effectively improve value physiological function
