Probiotics play important roles in many crucial functions for maintaining the homeostasis of host, such as protection against pathogens, immunity and metabolism dietary compounds. Resistant starch (RS) is or products which cannot be digested through body, but can by gut microbiota, producing a variety metabolites provide range physiological benefits to host. An RS classified prebiotic if it selectively stimulate growth and/or activity beneficial bacteria. To investigate bacteria driven structural changes tapioca starch, we used Attenuated Total Reflectance-Fourier Transform Infrared (ATR-FTIR) spectroscopy. Principal Component Analysis (PCA) intensity analyses individual spectral bands exhibited comprehensive alterations polysaccharide composition incubated with probiotic bacteria; samples gained more amorphous structure decrease ordered structure. The results suggest that fast, cheap, non-laborious method, FTIR spectroscopy coupled PCA has potential applied research area well food industry analysis starch-based substrates investigation bacterial strain examination its hydrolyzing capacity.
