Microbial Risk Assessment of Industrial Ice Cream Marketed in Italy

Ice cream is a frozen dairy dessert consumed worldwide. The state may give positive impression regarding microbiological safety; however, transmission of foodborne pathogens can also occur through ice consumption. A total 200 samples milk-based industrial cream, with and without inclusions, were purchased at different mass-market retailers in Italy analyzed for the detection enumeration aerobic colonies, Enterobacteriaceae, coagulase-positive staphylococci, Salmonella spp. Listeria monocytogenes. Results classified according to ranges acceptability, whose limits set each parameter. Unsatisfactory loads obtained two nine as regarded colonies respectively. L. monocytogenes was detected 16 samples, three them, exceeded legal limit acceptability (≤100 cfu/g) during marketing. No unsatisfactory staphylococci no detected. results allow speculation that inclusions be relevant source contamination cream. However, inadequate manufacturing hygiene practices threaten safety finished product. complex food matrix, comprehensive approach whole production system required ensure high standards quality safety.
