Metabolomics Profiling of White Button, Crimini, Portabella, Lion’s Mane, Maitake, Oyster, and Shiitake Mushrooms Using Untargeted Metabolomics and Targeted Amino Acid Analysis

Mushrooms contain multiple essential nutrients and health-promoting bioactive compounds, including the amino acid L-ergothioneine. Knowledge of chemical composition different mushroom varieties will aid research on their properties. We compared metabolomes fresh raw white button, crimini, portabella, lion’s mane, maitake, oyster, shiitake mushrooms using untargeted liquid chromatography mass spectrometry (LC/MS)-based metabolomics. also quantified concentrations, L-ergothioneine, a potential antioxidant which is not synthesized by plants or animals. Among seven varieties, more than 10,000 compounds were detected. Principal Component Analysis indicated same species, Agaricus Bisporus (white crimini), group similarly. The other formed individual, distinct clusters. A total 1344 (520 annotated) detected in all varieties. Each variety had tens-to-hundreds unique-to-mushroom-variety compounds. These ranged from 29 for crimini to 854 mane. All three bisporus similar profiles (including detection nine acids), while less methionine tryptophan. Lion’s mane oyster highest concentrations hundreds emphasizes differences these edible fungi.
