Abstract Kimchi, the traditional fermented vegetable dish from Korea, has been an integral part of Korean food culture for thousands years. Today, it is considered as a symbol identity people and globally appraised healthy food. The international standard kimchi was stipulated by Codex Alimentarius Commission in 2001, kimjang, communal activity making kimchi, listed UNESCO’s Intangible Cultural Heritage Humanity 2013. recognition that today not obtained easily since there have disputes with regard to its originality.
