Khamir Potensial Probiotik Hasil Isolasi dari Fermentasi Jus Jeruk Siam (Citrus nobilis var. microcarpa)

چکیده
Jus jeruk siam (Citrus nobilis var. microcarpa) yang difermentasi merupakan minuman olahan mengandung nutrisi penunjang pertumbuhan dari khamir probiotik. Tujuan penelitian ini adalah untuk mengetahui potensial probiotik dan genus diisolasi fermentasi jus siam. Kemampuan diperoleh dengan melakukan pengujian ketahanan terhadap kondisi asam (pH rendah) uji daya hambat bakteri patogen Eschericia coli. Semua isolat mampu tumbuh pada pH 2, 3 4, terbaik 4. juga menghambat E. coli terlihat zona terbentuk. Isolat diidentifikasi berdasarkan pengamatan secara makroskopis koloni mikroskopis sel khamir, reproduksi sel, fisiologis. Berdasarkan hasil identifikasi 6 menunjukkan Kluyveromyces, Pichia, Saccharomyces.

 Siam orange juice fermented is a processed drink that contains nutrients support the growth of probiotic yeast.
