چکیده

Abstract The sustainable food valorization is capable to stimulate the local products consumption with quality and nutritional security. In this scenario, Unconventional Food Plants (UFPs) deserve attention representing an alternative for rural communities contributing regional economy. This work aimed add information, once it evaluates total Fe concentration, Fe-species (water soluble, acid inorganic), proteins, Fe- proteins distribution in beldroega (Portulaca oleracea L.), guasca (Galinsoga parviflora Cav.), ora-pro-nóbis (Pereskia aculeata Mill.), piracá (Vernonia scorpioides (Lam.) Pers.), trapoeraba (Commelina benghalensis L.). Considering studied UPFs can be excellent sources, when compared foods of plant origin widely consumed cultivated, detaching leaves (687±19 µg g-1). However, showed low concentration associated macromolecules soluble species (1.6±0.3 These results may justify bioavailability species. On other hand, presented highest inorganic (1.3±0.2 UFPs, there high glutelins protein groups, meaning that UFPs low-cost supplementing intake. Finally, majority except leaves, mainly albumins, being a good source bioavailable

Knowledge, use, and disuse of unconventional food plants

BACKGROUND People's diets are usually restricted to a small number of plant species, even in regions with great diversity. We investigated the knowledge of residents in Ribeirão da Ilha, a district of Florianópolis (Santa Catarina, Brazil), about unconventional food plants (UFP). We report the UFP of the region, the parts used, the methods of processing, and the reasons for reduced use or even ...

Fractionation and identification of the allergic proteins in Aspergillus species

Background and Purpose: Allergy is an undesired immune response to non-pathogenic agents. However, some opportunistic microorganisms such as fungi can also cause allergy. Among those fungi, hyphae form of Aspergillus strains including A. fumigatus, A. flavus, and A. niger could be mentioned. In this study, we aimed to separate allergic proteins from Aspergillus strains and determine their ident...

Distribution of iron-containing superoxide dismutase in vascular plants.

Superoxide dismutases (EC 1.15.1.1) in vascular plants representing different evolutionary levels were characterized using polyacrylamide gel electrophoresis. The three forms of the enzyme were distinguished from each other based on the following criteria: a) the Cu-Zn enzyme is sensitive to cyanide wherease the Fe and Mn enzymes are not; and b) the Cu-Zn and Fe enzymes are inhibited by H(2)O(2...

Production of Electrospun Nanofibers from Food Proteins and Polysaccharides and Their Applications in Food and Drug Sciences

Preparation of nano-microfibers from biopolymers (e.g., proteins and polysaccharides) by using electrospinning technology has been considered by researchers due to the formation of fibers or particles at the nano and micrometer scales, high porosity level, adjustable dewatering behavior, and special mechanical behavior. These products can be used in the microencapsulation of bioactive compounds...
