In this study, researches were carried out on the protease enzyme activity of Jasminum officinale Linn. flower which grows naturally in Muğla and its surroundings. addition, fragrance components content jasmine determined. It was aimed to be used perfume making based harmony white with other flowers concept note. Protease purified from J. using TPP (Three Phase Partitioning) method. Optimal pH optimal temperature for enzyme, Km Vmax values casein, azokazaein, gelatin, hemoglobin, azoalbumin substrates SDS-PAGE check purity officinale. The molecular weight calculated as 21.386 kDa gel filtration chromatography. phenolic also has been determined that can design is most prestigious product cosmetic industry.
