Interactions between caseins and food-derived bioactive molecules: A review

چکیده
Caseins are recognized as safe for consumption, abundant, renewable and have high nutritional value. Casein molecules found in different aggregation states their multiple binding sites offer the potential delivering biomolecules with and/or health benefits, such vitamins, phytochemicals, fibers, lipids, minerals, proteins, peptides, pharmaceutical compounds. In present review, we highlight interactions between caseins food-derived bioactive molecules, a special focus on of techniques used to produce study particles delivering. Research caseins-minerals casein-pharmaceutical not included here. This review aims support development new innovative functional foods which can be designed delivery systems.
