Infrared spectroscopy is a widely used method of analysis to monitor various characteristics in the honey products analysis, highlight these changes and detect fraudulent modifications. In this way could not be avoided. This article reviews some most important applications spectroscopic procedures order discriminate different types other published between 2015–2022.
