Hexanal application reduces postharvest losses of mango (Mangifera indica L. variety "Kent") over cold storage whilst maintaining fruit quality

Mango (Mangifera indica L.) is a widespread crop that affected by many factors promote deterioration and limit its shelf life. This study aims to evaluate the effect of hexanal treatment cold storage conditions on mango quality postharvest losses. Mangoes var "Kent" were harvested from commercial orchard located in Korhogo northern area Ivory Coast. The fruit was then dipped an aqueous formulation stored at temperature (13 ºC) before ripening laboratory (30 °C). Their assessed during after ripening. results showed reduced losses 22.85% spoilage 12% four weeks storage. Furthermore, revealed increased firmness ascorbic acid content compared control fruit. However, there no difference soluble solids content, titratable acidity, pH, dry matter, colour between treated Sensory analysis improved some sensory descriptors such as overall likeability, chewiness, sweetness, flesh. Therefore, our suggests dipping mangoes solution, combined with conditions, extends life while maintaining or even improving organoleptic features.
