Virgin coconut oil (VCO) is widely used for the pharmaceutical and cosmetic industries. The high lauric acid content very beneficial in field, such as antiviral antibiotic. Also, this VCO useful formulation. production can be done by several methods, which are chemical, physical, enzymatic methods. By increase of demand at national international levels, study proceeded with using an way that was efficiently conducted environmentally friendly. purpose research to process pineapple waste, including crowns, fruit skins, leaves, trunks. waste contains enzyme bromelain break down protein emulator milk cream. From number experiments variations substrate volume temperature, optimal formation obtained 50oC ratio between material 9 1. quality evaluated water content, free fatty concentration, saponification numbers. Based on evaluation results, produced similar standard APCC, SNI, Codex.
