چکیده

Lactic acid bacteria (LAB) are a diverse group of microorganisms that can be found in natural habitats and used wide range industries, especially the food sector. They regarded "Generally Recognized as Safe" commonly starter culture, probiotics, biopreservative. However, some LAB genera excluded from "Qualified Presumption Safety" (QPS) list due to possibility they have virulence antibiotic resistance genetic determinants. The objective this study was investigate beneficial, virulence, resistance-related genes 10 well-characterized bacteriocinogenic strains. auto-aggregation, co-aggregation, cell surface hydrophobicity, bile salt tolerance were also evaluated examine their potential probiotics and/or culture. Results showed all tested strains abilities for auto-aggregation at 4oC 37oC, co-aggregation with S. aureus JCM8704, typhimurium BIOTECH1826, E. coli DH5α, significant cell-surface hydrophobicity. only few able withstand media treated 0.3% salt. Among strains, L. lactis IO-1 C. divergens V41 had maximum values respectively. exhibited highest percentage faecium NKR-5-3 percentages indicator Our findings isolates presented distinct combinations virulence-related genes. Only two ten presence multiple Lactococcus sp. QU12 high frequency beneficial genes, 2 out 7 present encoding factor 11 13 factor. positive tetracycline gene tetM aminoglycoside aphA-2, respectively, transposon Moreover, 8 classes. Although few, substantial danger these being transferred acquired cannot overlooked could potentially cause serious health concerns future. These results suggest despite promising properties LAB, careful safety evaluation should prerequisite before using systems.

Incidence of Virulence Determinants and Antibiotic Resistance in Lactic Acid Bacteria Isolated from Iranian Traditional Fermented Camel Milk (Chal)

Lactic acid bacteria, including lactobacilli, enterococci, leuconostoc and weissella species isolated from Iranian traditional fermented camel milk (Chal) were assessed for the incidence of virulence determinants (gelE, efaAfm, efaAfs, ace, espfs, cylM, cylA and cylB), sensitivity to various antibiotics and virulence phenotypes. The incidence of virulence genes was determined by polymerase cha...

Characterization of bacteriocinogenic strains of lactic acid bacteria from traditional Slovenian cheese ‘Tolminc’

Artisanal cheese and other dairy products are traditionally produced from raw milk. The chemical and microbiological properties of milk are besides technological procedure among the most important parameters that determine the final characteristics of a product. Majority of microbes present in the rich microbiota of raw milk are considered beneficial but we should also be aware of a possibility...

Phenotypic and genotypic diversity of dominant lactic acid bacteria isolated from traditional yoghurts produced by tribes of Iran

Morphological, biochemical and molecular characteristics were studied to identify dominant lactic acid bacteria (LAB), isolated from traditional yoghurts produced by tribes of Iran. From 60 yoghurt samples, a total of 137 LAB isolates were determined, in which 66 and 71 were identified as lactic acid cocci and bacilli, respectively. Biochemical tests showed the occurrence of 9.76% mesophilic ho...

Comparison of Lactic Acid Isomers Produced by Fungal and Bacterial Strains

Many organisms produce lactic acid by fermentation, but most industrially important strains are from the genus Lactobacillus and Rhizopus oryzae. L(+)-Lactic acid is the only optical isomer for use in pharmaceutical and food industries because human body is only adapted to assimilate this form. In this research, six strains of Lactobacillus and four strains of R. oryzae (known as high producer)...

Phenotypic and Genotypic Characterization of Some Lactic Acid Bacteria Isolated from Bee Pollen: A Preliminary Study

In the present work, five hundred and sixty-seven isolates of lactic acid bacteria were recovered from raw bee pollen grains. All isolates were screened for their antagonistic activity against both Gram-positive and Gram-negative pathogenic bacteria. Neutralized supernatants of 54 lactic acid bacteria (LAB) cultures from 216 active isolates inhibited the growth of indicator bacteria. They were ...
