From culinary modernism to culinary cosmopolitanism: the changing topography of Beijing’s transnational foodscape

In the early 1990s, foreign foods were reintroduced into everyday life of ordinary people in Beijing. As city ascends to top on global hierarchy urban places, its transnational food practices have evolved drastically. Proposing “co-bricolage” as a useful framework rethink culture, this article examines changing modality trans-local foodways Beijing from 1990s 2010s, and identifies transition culinary modernism cosmopolitanism. Whereas foreign-local relations perceived through structural contrast between modernity lack thereof, cosmopolitanism 2010s is underpinned by an eclectic disposition that considers local be affinal combinatory. The discussion demonstrates potential historicize global-local processes move beyond dialectical model for understanding connections dynamics.
