Fate of Listeria monocytogenes and Shiga Toxin-Producing Escherichia coli on Bresaola Slices During Storage

The viability of multistrain cocktails genetically marked strains Listeria monocytogenes and Shiga toxin-producing Escherichia coli (STEC) were separately monitored on slices one brand a commercially produced bresaola (ca. pH 6.7 aw 0.899) during extended storage at refrigeration abusive temperatures. Two 8 g each; ca.10.2 cm wide, ca. 11 long) layered horizontally within nylon-polyethylene bag. outer surface each slice was inoculated (50μL total; 3.5 log colony-forming units [CFU]/package) with rifampicin-resistant (100μg/mL) cocktail either L.
